Fresh roasted whole coffee beans should be ground right before brewing your coffee. Once coffee is ground, a larger surface area is exposed to oxygen, quickly deteriorating the delicate flavors. The uniformity of coffee grounds is also an important factor in maintaining consistent extraction in the brewing process. Using a quality burr grinder will greatly improve coffee brewing.

This excerpt is from the Coffee Common book that was distributed at TED2011. The book serves as a brief introduction to coffee that is meant to encourage thought and curiosity among the attendees. We hope it will create a better understanding of the complexities of coffee production throughout the entire process, leading to more conversations and more enlightened consumers.
