Fresh roasted whole coffee beans should be ground right before brewing your coffee. Once coffee is ground, a larger surface area is exposed to oxygen, quickly deteriorating the delicate flavors. The uniformity of coffee grounds is also an important factor in maintaining consistent extraction in the brewing process. Using a quality burr grinder will greatly improve coffee brewing.
